DRYING: at least 15 months.

QUALITY: produced exclusively with Italian meat. After drying, a very thorough deboning and thorough cleaning, removing fat, any dark muscle and yellow fat. Then add a stuffing made from summer truffles and put it in a mold.

FLAVOR AND APPEARANCE: delicate but characteristic, with the addition of whole pieces of truffle clearly visible when cut.

Gluten free. Without milk derivatives.
